Cucumber Tomato Salad
Ingredients:
- 2 large cucumbers, coined
- 1/2 of a red onion, sliced
- 2 large tomatoes, sliced
- 4 ounces feta cheese, crumbled
- Balsamic Vinegar
- Olive Oil
Peel and cut the cucumber into 1/4 inch slices and put them in a large bowl. Cut the onion into slivers and add them to the bowl. Cut the tomatoes into 1/16 inch slices and add to bowl. Add a little olive oil and some balsamic vinegar. Stir and place in fridge for 2 - 6 hours, occasionally stirring and adding more balsamic vinegar as needed. Remove from fridge and drain extra vinegar from the bowl. Top with crumbled feta and serve cold.
