Mashed Yams

Serves 4 to 5

Ingredients:

  • 3 large garnet yams

  • 2 tablespoons butter

  • 2 tablespoons molasses

  • 1/8 teaspoon ground cloves

  • 1/8 teaspoon nutmeg

  • 1/8 teaspoon ginger

  • 1/8 teaspoon allspice

Peel and pare yams. Place yams in a pot and cook until fork tender. Mash yams in pot and add butter and molasses. Stir in cloves, nutmeg, ginger, and allspice.
