Chocolate Mint Ice Cream
Makes about 2 quarts
This Philadelphia-Style ice cream uses an electric ice cream machine.
Ingredients:
1 cup cocoa powder
1/2 cup white sugar
1/2 cup brown sugar
2 cups non-fat milk
2 teaspoons vanilla extract
2 teaspoons peppermint
2 cups heavy whipping cream
Place cocoa powder, white sugar, and brown sugar in a bowl and mix. Add milk, vanilla, and peppermint and whisk thoroughly. Add heavy whipping cream and mix together. Place in fridge to cool for 10 minutes.
Assemble ice cream machine and pour in chilled mixture. Turn on machine and allow to run for 25 to 35 minutes. Check ice cream consistency using a spoon; if it has reached the desired thickness, spoon into a freezer-proof container and then freeze for later consumption.
