Butternut Squash

Serves 4

Baking Temperature: 400 degrees

Time: 25 - 30 minutes

Ingredients:

  • 1 butternut squash - peeled, seeded, and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 - 3 cloves garlic, minced
  • salt and ground black pepper to taste

Preheat oven to 400 degrees F .

Easy way to peel butternut squash: Slice off the top and bottom of the squash and then cook it in the microwave for about three and a half minutes. Let the squash cool until you can handle it and rejoice at the ease with which you can now peel away the skin! (Can result in parts of squash that are already cooked.)

Toss butternut squash with olive oil and garlic in a large bowl. Season with salt and black pepper. Arrange coated squash on a baking sheet (or pan).

Roast in the preheated oven until squash is tender and lightly browned, 25 to 30 minutes.
