Ingredients: (adapted from Joy of Cooking)
Chop giblets into 1/4 size pieces and sauté in butter. Add onion and cook until golden.
In mixing bowl, combine bread cubes, parsley, celery, dried basil, salt, paprika, nutmeg. Add milk (stock or butter) to moisten the stuffing slightly.
Combine in buttered casserole and bake. You can bake it the day before, 15 min on high, covered, in microwave oven. Or bake in oven at about 350 degrees F until cooked or golden brown, maybe 30 minutes.
If you cook ahead of time, underbake slightly so you can reheat in microwave before dinner.
