Oatmeal Chocolate Chip Cookies
Makes about 30 1-ounce-sized cookies
Baking Temperature: 375 degrees
Time: 8 to 10 minutes
Ingredients:
1 stick butter (1/4 lb.)
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1 teaspoon vanilla
1 1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup oatmeal
1 cup chocolate chips (semi-sweet)
Cream the butter and add both sugars. Beat mixture until light and smooth - it should get lighter in color. Beat in egg and vanilla.
In a separate bowl, mix flour, salt, and baking soda. Add dry ingredients to the butter and sugar mixture and blend well. With a strong spoon or spatula, stir in the oatmeal and chocolate chips.
Drop cookies by rounded 1-ounce spoonfuls onto a greased cookie sheet. Bake at 375 degrees for 8-10 minutes. The edge should be golden brown.
