Basic Deviled Eggs

8 deviled eggs halves

Ingredients:

  • 4 large eggs, hard boiled and peeled

  • 1/4 cup Miracle Whip

Halve 4 hard boiled eggs lengthwise. Remove yolks and place in a small bowl. Mash yolks with a fork and stir in Miracle Whip. Fill egg whites evenly with yolk mixture. Store covered in refrigerator.

How to hard boil eggs?

Method 1: Using an electric kettle that has no exposed element, place 4 eggs inside the kettle and add enough water to be 1 inch above the eggs (yes they float, it is annoying). Turn on the kettle and allow it to go through a cycle to boil the water. When the kettle boils and clicks off, set a timer for 15 minutes and get an ice bath ready. When 15 minutes have elapsed, place the eggs in the ice bath and begin removing the eggshell.

Method 2: Place 4 eggs in a pot and add enough water to be 1 inch above the eggs (yes they float, it is annoying). Turn on high and allow it to come to a rolling boil. Once boiling, turn off the heat, set a timer for 15 minutes, and get an ice bath ready. When 15 minutes have elapsed, place the eggs in the ice bath and begin removing the eggshell.

Parmesan Stuffed eggs

Ingredients:

  • 4 hard boiled eggs

  • 2 tbsp mayonnaise

  • 1/4 cup extra-virgin olive oil

  • 1/4 cup freshly grated parmesan cheese

  • salt and pepper to taste

  • (8) toasted almonds chopped or cooked bacon to garnish

Cut the eggs in half lengthwise and use a thin, sharp knife to take a tiny slice from the bottom of each half so that it will sit firmly in place after stuffing. Scoop out the yolks with a small spoon and place in a small bowl. Set the whites on a platter.

Mash the yolks with a fork until smooth and mash in the mayo.

Stir in the oil, a drizzle at a time, until it is completely incorporated and the mixture is soft and fluffy. You may not need all of the oil. Stir in the Parmesan cheese and the chopped almonds or bits of bacon. Season to taste with salt and pepper.

Using a small spoon, stuff the whites with the yolk mixture. Top each half with an almond or 1/4 inch bit of cooked bacon. Serve immediately or chill.
