Fajitas

Serves 4

Ingredients:

  • 2 bell peppers, sliced
  • 1 red onion, sliced
  • 3 - 4 cloves garlic, chopped
  • 3 chicken breasts (or equivalent amount of other meat)
  • 1 - 2 cups spaghetti sauce
  • 2 - 3 tablespoons fajita seasoning
  • shredded cheddar cheese
  • shredded lettuce
  • salsa
  • pickled peppers
  • flour tortillas

Fajita Seasoning:

  • 1 tablespoon chili powder
  • 1 1/2 teaspoon cumin
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes (or a pinch of cayenne)

Slice chicken and sauté in a large pan. Add red onion and cook until soft. Add garlic and bell peppers and stir until peppers are almost soft. Sprinkle fajita mix over pan and stir. Pour in spaghetti sauce and heat. Serve with shredded cheddar cheese, shredded lettuce, salsa, and pickled peppers on a flour tortilla.
