Pan-Fried Chicken Strips

Serves 4

Ingredients:

  • 2 tbs olive oil
  • 4 boneless, skinless chicken breasts
  • 2 cloves garlic, diced
  • 8 green onions, chopped
  • 4 tbs dry sherry
  • 2 tbs lemon juice
  • salt
  • pepper

Slice chicken breasts into 1/2 inch strips. In a large pan, coat the bottom of the pan with olive oil and add the chicken strips, garlic, and green onions. Sauté over high heat until the chicken is lightly browned and tender. Remove from the pan and add the dry sherry and lemon juice. Reduce the heat and deglaze the pan to make a sauce. Return the chicken to the pan and add salt and pepper to taste. Do not overcook this dish so that the meat stays juicy and tender.
