Peppermint Ice Cream

Makes about 2 quarts

This Philadelphia-Style ice cream uses an electric ice cream machine.

Ingredients:

  • 1 cup white sugar

  • 2 cups non-fat milk

  • 1 teaspoon vanilla extract

  • 1 teaspoon peppermint extract

  • 2 cups heavy whipping cream

  • Optional: candies

Mix sugar and milk together. Add vanilla and peppermint extract and whisk thoroughly. Add heavy whipping cream and mix together. Place in fridge to cool for 10 minutes.

Assemble ice cream machine and pour in chilled mixture. Turn on machine and allow to run for 25 to 35 minutes. Check ice cream consistency using a spoon; if it has reached the desired thickness, (see notes about adding candies) spoon into a freezer-proof container and then freeze for later consumption.

Adding Candies:

  • Crushed Starlite mints (about 35 - 40)

  • Chopped Andes mints (about 28 pieces or 4.67 ouces)

If you want to add candies to the ice cream, add them in once the ice cream has reached the desired thickness but before you shut off the machine. Sprinkle in the candies as the machine churns to fully incorporate them into the ice cream.
