Tilapia Piccata

This dish goes together so quickly that it is a good idea to have everything measured before you begin. In less than 15 minutes, you’ll have a delicious entrée to serve to family or friends.
Ingredients:
- 1 large or 2 medium lemons
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 tilapia (or other white fish) fillets, thawed and blotted dry
- salt and pepper
- 1 small clove garlic, minced
- 1 tablespoon capers, drained
Cut 3 thin slices off one end of lemon, cut each slice in half and set aside. Squeeze remaining lemon(s) and measure 2 Tbsp of juice .
In a large skillet over medium high heat, heat olive oil and butter until melted. Add fish fillets, sprinkle with salt and pepper, and cook for 3 minutes. If butter begins to burn, turn down to medium.
Turn fish and cook 2-3 more minutes or until cooked through. Remove to plates.
Add lemon juice, lemon slices, garlic, and capers to drippings in pan. Cook stirring for 2 minutes. Spoon over fish and serve.
