Fresh Tomato Pasta Salad


Ingredients:

  • 8 ounces cherry tomatoes, sliced
  • 1 tablespoon fresh basil, chopped
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh oregano, chopped
  • 1/2 teaspoon fresh rosemary, chopped
  • pepper
  • 4 tablespoons olive oil
  • 1 - 2 tablespoons red wine vinegar
  • 12 ounces rotini pasta
  • Parmesan cheese, grated

Slice tomatoes and place them in a bowl to season. Add fresh chopped herbs and few grinds of pepper to tomatoes and stir. Add olive oil and red wine vinegar to tomatoes and combine.

Cook pasta according to package directions, drain and place in a bowl. Add seasoned tomato mixture and toss together. Sprinkle with Parmesan cheese and serve warm.
