Spinach Salad

Basic Spinach Salad

Serves 4 to 6

Dressing:

  • 2 teaspoons sugar
  • 1/2 teaspoon dry mustard
  • 2 1/2 tablespoons red wine vinegar
  • 1/2 cup olive oil


Salad:

  • Fresh baby spinach
  • Bacon bits
  • 4 oz feta cheese
  • 3 hard boiled eggs
  • 1 small red onion

Combine dressing ingredients into a bottle, shake well and refrigerate. For the salad ingredients, put baby spinach into a bowl and add bacon bits, and feta cheese. Chop eggs and slice onions and add them to the spinach mixture. Just before serving, toss salad with dressing.

Spinach Salad with Pecorino, Pine Nuts, and Currants

Serves 4 to 6

Ingredients:

  • 1 1/2 tablespoons dried currants
  • 1 1/2 tablespoons pine nuts, toasted, coarsely chopped
  • 1 1/2 tablespoons balsamic vinegar
  • 1 1/2 teaspoons minced shallot
  • 1/2 teaspoon sugar
  • 2 tablespoons olive oil
  • 6 cups (packed) baby spinach leaves
  • Shaved Pecorino Romano cheese

Whisk dried currants, pine nuts, balsamic vinegar, shallot, and sugar in small bowl. Whisk in oil. Season with salt and pepper. Toss spinach with vinaigrette in large bowl. And cheese and toss.
