Pecan Puffs

Makes about 40 1 1/2-inch cookies

Baking Temperature: 300 degrees

Time: 30 minutes

Ingredients:

  • 1/2 cup butter
  • 2 tablespoons sugar
  • 1 teaspoon vanilla
  • 1 cup pecans
  • 1 cup flour
  • confectioner's sugar

In a bowl, beat butter until soft. Add sugar and blend until creamy. Add vanilla. Chop pecans in a grinder or finely with a knife. Add pecans and flour and stir into mixture. Roll dough into small balls. Place balls on a greased cookie sheet and bake at 300 degrees for 30 minutes.

Remove from oven, and while hot, roll in confectioner's sugar. Place back on cookie sheet and return to the oven for 1 minute to set the sugar as a glaze. Cool and serve. Best stored with out cookies touching each other to prevent excessive loss of confectioner's sugar.
