Baking Temperature: 425 degrees F
Baking Time: 20 - 22 minutes

1 tablespoon butter
4 eggs
1 cup milk
1/4 teaspoon vanilla extract
1 cup flour
1 ounce shredded cheddar jack cheese
Melt butter in microwave and pour into pan, coat the bottom. Allow to cool briefly until cloudy and recoat, bringing the butter up the sides by a 1/4 inch and really packing in the butter to the edge of the pan.
Beat eggs and then add milk and vanilla, followed by flour; mix well to remove clumps. Pour egg batter into the pan and bake for 20 minutes . Remove from oven and sprinkle cheese over top; allow to melt before slicing and serving warm.
