Chicken & Vegetable Soup

Serves 5 - 6

Ingredients:

  • 3 carrots
  • 4 - 6 celery ribs
  • 1/4 large yellow onion
  • 1.5 pounds chicken (breasts or thighs)
  • 32 ounces chicken stock
  • Pepper
  • Salt

Chop carrots, celery, and onion and place in a crockpot. Chop the chicken into spoon-sized chunks and place in crockpot. Add chicken stock and season with a pinch of salt and lots of black pepper.

Set heat to low and allow to cook for 8 - 10 hours. Remove from heat, add additional water if needed for volume, season with more salt and pepper. Serve hot.
