Zucchini Veggie Medley

Serves 4 - 6

Cook Time: 30 to 35 minutes

Ingredients:

  • 2 tablespoons olive oil
  • 1 red onion, sliced into sections
  • 3 small to medium zucchinis, thinly coined
  • 5 medium tomatoes
  • 2 - 3 tablespoons Italian seasoning
  • 1/2 - 1 cup spaghetti sauce

Heat a pan with olive oil, add onion and cook until al dente. Add zucchini and stir to coat with olive oil. Cut tomatoes into chunks and add to pan. Stir and sprinkle with Italian seasoning. Continue to cook (add spaghetti sauce if desired) until zucchini is cooked, about 30 to 35 minutes.
