Serves 4
Ingredients:
2 small red onions (or 1 large)
8 cloves of garlic
8 small red potatoes
6 summer squash
3 whole bell peppers (red, green, yellow/orange)
1 tablespoon olive oil
favorite BBQ sauce
salt
pepper
Optional: Pre-cooked meat (beef/chicken/sausage) cut into small pieces and toss with vegetables.
Heat onion and garlic in microwave for 40 seconds and place in a steel mixing bowl. Pre-cook the chopped potatoes and place in bowl. Chop the remaining vegetables and place in bowl. Toss vegetables with olive oil and salt and pepper. Add BBQ sauce and set to marinate for 30 minutes to an hour.
Place vegetables in a BBQ wok/dish or slide onto skewers and place on the grill and cook until vegetables are tender and meat is hot.
