Makes: 80 small cookies (1 inch diameter)

Time: 10 to 12 minutes
Ingredients:
2 cups all-purpose flour
1 teaspoon baking soda
1 cup butter, softened
3/4 cup packed brown sugar
1/4 cup white sugar
1 (3.4 ounce) package instant vanilla (or chocolate) pudding mix
2 eggs
1 teaspoon vanilla extract
1 cup chocolate chips
1 cup rolled oats* (optional)
Preheat oven to 350 degrees. Mix together flour and baking soda in a small bowl, set aside. In a large bowl, mix together the butter, brown sugar, and white sugar. Beat in the instant pudding mix until blended. Mix in the eggs and vanilla. Then add the flour mixture in small parts. Blend together. (Mix in rolled oats if desired.) Add the chocolate chips and stir together. Drop cookies by rounded spoonfuls onto a greased cookie sheet. Bake for 10 minutes and then switch the cookie sheet positions (switch top and bottom), bake for another 2 minutes. Edge should be golden brown.
