Zucchini Bread
Makes 1 loaf, maybe 1.5, I cannot remember
Baking Temperature: 350 degrees
Time: 1 hour
Ingredients: (my sister loves this bread!)
- 2 cups sugar
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoons baking powder
- 3 teaspoons cinnamon
- 1 cup vegetable oil
- 2 eggs
- 3 teaspoons vanilla
- 2 cups grated zucchini
- 1/2 cup walnuts, chopped
Grate zucchini using the largest holes on a cheese grater, set aside.
Mix sugar, flour, salt, baking soda, baking powder, and cinnamon together in a small bowl.
In a large bowl, blend with a mixer the vegetable oil, eggs, and vanilla. Add grated zucchini and walnuts to wet ingredients and stir well.
Fold in portioned of the dry ingredients into the wet mixture and blend together with a spoon. Bake in a greased loaf pan measuring 8.5 x 4.5 x 2 at 350 degrees for 1 hour until done. Let cool in pan for 10 to 15 minutes before removing.
