Serves 4 to 6
Ingredients:
Peal potatoes and cut into evenly sized pieces, place in a pot with water and steam. Remove from heat and drain potatoes just before the fork pierces smoothly (not quite to mash potato softness). Allow to cool completely before adding to other ingredients (this prevents the potatoes from mashing and falling apart when mixing).
Once potatoes are cool, toss with lemon juice, olive oil, salt, and pepper. Add celery, eggs, and green onion. Mix Miracle Whip with mustard and add red wine vinegar. Add the Miracle Whip mixture to the potato mixture. Add enough sweet relish to moisten the salad. Chill and serve cold.
