Risengrød er en traditionel dansk juleret. Rice porridge is a traditional Danish Christmas dish. It can be served at different times of the day throughout the year, but during Christmas it is a special dinner treat or sweetened and served for dessert. In the Rosenau tradition it is served with sweet condiments at the beginning of the meal.
Ingredients:
4 cups milk
1 cup white rice
salt
Microwave/Crockpot Adaptation: Place milk and rice in a crockpot insert and microwave for 5 minutes on high. Stir the mixture to break up clumps of rice. Drop the power to 30% and cook another 15 minutes in 5-minute segments - stir well between each segment of cooking. Do a final stir and transfer to a hot crockpot stand set to high. Cook in the crockpot for about 1 hour on high, stirring every 5 to 10 minutes. Switch to a warm setting once you reach the desired consistency of porridge and stir occasionally until you serve. Serve warm with cinnamon sugar, cream, and butter.

Stovetop Adaptation: Pour milk and rice into a heavy pot and bring to a light boil, stirring constantly. Cook for at least 1 hour, stirring every 10 - 15 minutes depending on how quickly the rice is sticking to your pot. Keep cooking the rice absorbs all the milk and becomes a thick porridge.
D'Arlene Rosenau's instructions: Cook in a double boiler for 1+ hour until milk is absorbed and the rice is the consistency of pudding. Serve warm with cinnamon sugar, cream, and butter.
