Vegetable Pasta Salad
Serves 4 to 6
Ingredients:
- Olive oil
- Salt
- Pepper
- 8 ounces rotini pasta
- 1 large tomato, diced
- 1/2 can artichoke hearts
- 2 tablespoons Kalamata olives
- 3 tablespoons fresh basil, chopped
- Roasted sweet red peppers
- Mozzarella cheese
- Parmesan cheese
Cook rotini according to package instructions, drain and toss with olive oil, salt and pepper. Combine the rest of the ingredients in a bowl. Mix well and add in cooked pasta. Serve chilled.
