Baking Temperature: 425 degrees F

Baking Time: 12 to 15 minutes

Sometimes called a German or puff pancake

Ingredients: (Courtesy of Dianna Wright)

  • 2 eggs, room temperature

  • 1/2 cup milk

  • 1/2 cup flour

  • 1/4 cup sugar

  • 4 tablespoons unsalted butter

  • Powdered sugar for dusting

Wisk together the eggs, milk, flour, and sugar.

Melt butter over medium heat in a 10-inch cast-iron skillet, and tilt the pan so that the butter coats the sides. Pour the egg mixture into the skillet and cook for about 1 minute. Place the skillet in the oven and bake until the pancake is puffed and golden, about 12 to 15 minutes. Remove from the oven, dust with powdered sugar, and serve immediately.
