Broiled Salmon

Serves: 6

Broil Temperature: 450 degrees

Time: 10 - 15 minutes

Ingredients: (courtsey of the The Frugal Gourmet, Jeff Smith)

  • 1/2 cup olive oil

  • 1/4 cup Chinese light soy sauce

  • 1/2 teaspoon dried dill weed

  • 1/8 cup lemon juice

  • Ground clove (I used a pinch, maybe 1/8 of a teaspoon)

Prepare a sauce of olive oil, soy sauce, dill weed, lemon juice, and clove; mix well. Drizzle oil on a roasting pan and place the fish in the oil. Brush the sauce on one side of the fish and then turn them over and brush the other side. Drizzel any remaining sauce over the fish.

Preheat the broiler to 450 degrees. Broil steaks on one side until lightly browned and tender, about 10 to 15 minutes until the internal temperature is 145 degrees. Do not overcook. Remove fish from the oven and let rest for 10 minutes before serving.

This works for fish with skin or skinless.
