Granola
Makes about 6 1/2 cups
Time: 6 minutes
What my sister and I lovingly called "mommy cereal"; my dad would make it, but my mum would eat it with either some milk or on top of yogurt.
Ingredients:
6 cups rolled oats
1 cup dried fruit (cranberries)
1 cup chopped walnuts
1/4 cup flaked coconut
2 teaspoons cinnamon
2 teaspoons vanilla extract
1/2 cup canola oil
< 1 cup honey
Mix all ingredients in a glass, microwavable container holding at least 8 cups. Microwave for 2 minutes and mix. Microwave for 2 minutes and mix. Microwave for 2 minutes and mix. Keep mixing until cool and store in a closed container (alternatively you can spread it out on a tray to cool).
Total cook time should be about 6 minutes.
