Salmon with a Mustard-Maple Sauce

Cook Time: 20 minutes + 30 minutes refrigeration

Ingredients:

Mix together the maple syrup, Dijon mustard, garlic, ginger, and cayenne pepper in a small pitcher and place in the refrigerator for at least 30 minutes.

Preheat the oven to 450 degrees F. Oil a roasting pan or rimmed baking dish and the skin side of the salmon. Place the salmon skin-side down in the pan and then oil the top and sides of the salmon. Brush some maple syrup mixture over the salmon and place in the oven. Brush more syrup mixture on the salmon a few more times while cooking. Bake for about 20 minutes or until the salmon is flaky.
