Stuffed Jumbo Shells

Serves 4 to 6

Time: 5 to 10 minutes

Ingredients:

  • 12 ounces of jumbo shells
  • 2 tablespoons olive oil
  • 6 ounces of chopped spinach
  • 1 cup chopped onion
  • 1 clove minced garlic
  • 1/3 cup water
  • 1 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1/8 teaspoon ground nutmeg
  • 1 egg
  • 3/4 cup parmesan cheese*
  • 1/4 cup jack cheese
  • 1 cup mozzarella cheese
  • +1 cups spaghetti sauce

*Reduce cheese and add a pound of ground beef (or Italian meatballs) to the mixture.

Cook jumbo shells according to package directions.

Add olive oil, spinach, onion, garlic, and water to pan and cook for 10 minutes, stirring occasionally. Remove from heat. Add seasonings and blend well. Let the mixture cool.

Stir in the egg, parmesan cheese and jack cheese.

Pour 1 cup of spaghetti sauce into a 13x9 inch baking dish (you may need a second, slightly smaller dish for any overflow).

Stuff the jumbo shells with the cheese mixture and place in the dish. Pour spaghetti sauce over the jumbo shells and sprinkle mozzarella cheese over top. Cover and place in microwave and heat for 5 to 10 minutes or until the cheese is melted and the jumbo shells are hot.
