1 cup butter, softened
1 1/4 cups brown sugar
2 cups flour
1 1/2 tablespoons ground cinnamon
1 1/2 tablespoons ground ginger
1 teaspoon orange zest (optional)
1 teaspoon baking soda
1/2 teaspoon ground cloves
1/4 teaspoon salt
Cream butter and brown sugar together with a mixer.
Stir together flour, cinnamon, ginger, orange zest, baking soda, cloves, and salt in a separate bowl. Gradually add dry ingredients to the butter mixture until blended thoroughly.
Divide dough in half. Pat each piece evenly into a buttered, 8-inch round cake pan. Bake about 25 minutes at 325 degrees, until the edges are slightly brown.
Remove from oven and prick each wedge in a pattern with a pick and sprinkle with sugar. Cool 5 minutes. Remove from pans and slice each cake into 16 pie-shaped pieces. Cool completely.
