Fudge

Makes 16 fudge cubes

This recipe uses three types of chocolate to create a beautifully layered fudge. There are many combinations that can be geared towards the season, event, and personal preference. Common layer types are milk, dark, white, and berry-flavored chocolates, butterscotch and mint are also lovely layers to include during the holidays.

Ingredients: (makes one layer of fudge)

  • 1 cup chocolate chips

  • 2 tablespoons of butter

  • 1/3 of a can of sweetened condensed milk (14 oz can) (each layer gets 1/3 cup and 2 tbs)

Brownie pan, 8" x 8", covered in wax paper

Place chocolate, condensed milk, and butter in a bowl and then put it in the microwave. Heat for a total of 2 minutes making sure to stir every 30 seconds. By the end of the heating, the mixture should pour easily. Pour the mixture into the pan and let cool completely. Repeat process for each layer making sure that the layer in the pan is completely cool before adding another layer.

Remove from the pan and turn upside down on a cutting board. Cut into desired sized pieces and trim edges of fudge if necessary.

Place into a container with wax paper between layers and put in the refrigerator for an hour. Then remove and it is ready to eat.

All Chocolate Fudge: use 3 cups of semi-sweet chocolate chips, 6 tablespoons of butter, and 14 ounces of sweetened condensed milk. Place in a microwavable bowl, microwave for 1 minute, stir, then 30 seconds and stir (repeat until smooth). Then pour into the pan lined with wax paper, sprinkle with coarse salt and let sit until hard before cutting and devouring. (You can also put it in the fridge for an hour).

Caramel Top Layer: 11-ounce package of caramel bits, 2 tablespoons heavy cream, sea salt (sprinkle on top). Melt in the microwave as detailed above and then pour on top of an all chocolate fudge.
