Ingredients:
Rack(s) of pork loin back ribs (the common costco/sam's club rib package
Ground Mustard
Rib rub of choice
Apple cider vinegar and water (50/50 mix)
2 tbspn melted butter
2 tbspn melted honey
BBQ Sauce of choice
Directions:
The day before your smoke, take the membrane off the back of your ribs and liberally cake with ground mustard (really pack it on there)
The day of your smoke, 1-2 hours before you plan on smoking, liberally cover with ribs with your rub of choice, get it all over top/bottoms/edges/etc
Pre-heat smoker to 225°F and turn on super smoke setting if available
Once the smoker is up to temp, place the ribs bone side down directly on the grates as close to the middle as possible
Cook ribs to 160°F and spritz with AC/W mixture every 30/45 minutes (not super necessesary but moistens the tops of the meat a bit)
Melt honey and butter together and mix well
Once ribs have come up to 160°F place meat side up on a large sheet of thicker tinfoil (the thin stuff will just puncture and loose all the juices), brush the tops with the honey/butter mixture, then turn over and brush the bone side with the remainder of the mixture
Tightly wrap the ribs with tin foil and return to the smoker until they reach and internal temp of 203°F
Remove ribs from tin foil and place directly on the grate and add BBQ sauce to the tops of the ribs, all to cook 30-45 minutes until the sauce carmelizes and the ribs return to temp of 203°
Pull ribs and allow them to rest for 10-15 minutes
