Ingredients
2 bags of frozen cheese tortellini (louisa 19oz)
2 packages (14oz) Polska Kielbasa (or Andouille Sausage),
8 oz fresh spinach
4/5 thinly sliced garlic cloves
1/2 Red Onion
Shredded Mozerella Cheese (or Shredded mixed Cheddar)
Opt - 1 thinly chunked up zuchini
Opt - 1 thinly chunked yellow squash
Opt - Cherry tomatoes sliced in half
Opt - Asparagus
Opt - Artichoke Hearts
Opt - Green Beans
Opt - Carrots
Opt - Acorn Squash
Directions
Prepare the ingredients, thinly slice the Sausage, de-stem the spinach, slice the garlic, chop the vegies
Heat griddle to medium
Put a light coat oil on the griddle
Add the meat to the griddle in a single layer, try to have all the meat cooking at once and not stacked on top of each other
Place the frozen tortellini on the griddle after the meat has cooked for a few minutes and spray a little more oil on it to keep it moist
Keep flipping meat and tortellini to keep from burning.
Clear a spot in the middle of the griddle and add a small pool of oil. Put the garlic in the oil and allow to saute for a 30 seconds.
Add the onion to the garlic in the center of the griddle and allow to cook, while adding the rest of the veggies to the meat and tortellini
Start mixing all the items together and allow the rest of the veggies to cook
Once the veggies are done to your likeness, remove from griddle
Top with Mozerella Cheese
