Ingredients:
- 4-6 Catfish Fillets
- 1/3 cup canola oil
- 2 large eggs
- 1/3 cup flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp creole seasoning
- 1/2 tsp Old Bay seasoning
- 1/2 tsp paprika
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1 1/2 cups Panko
- 1 tsp parsley
Directions:
- Rinse catfish and set aside
- Heat oil in skillet over medium high heat
- Prepare dredging stations in pie plates:
- Flour and seasonings (except parsley)
- Eggs, beaten
- Panko and parsley
- Dredge catfish in flour mixture, then eggs, then crumbs
- Fry 3-4 minutes on each side until golden brown and crispy (and cooked through). Drain on paper towel.
