Ingredients:
3 1/2 – 4 cups bread flour
1 1/4 - 1 1/2 cups warm water (110-115F degrees)
2 Tablespoon sugar
1 packet instant yeast (2 1/4 teaspoon
1 teaspoon kosher salt
4 Tablespoon cold butter, cubed *see note
Directions:
Proof yeast (add hot water, sugar and yeast to mixing bowl, cover and allow yeast to rise).
Take mixing bowl to stand mixer w/ dough hook attachment, add 2 cups of flour and mix on low speed (2 on most KitchenAid's). Mix for about 4 minutes.
Add in remainder of flour 1 cup at a time.
Once flour is mostly mixed add salt.
Once the dough can no longer hold a shape (slack) you need to start adding butter (if the dough does not become slack you may need to add water 1 tablespoon at a time).
Add cold butter 1 tablespoon at a time, waiting 3-5 minutes between each tablespoon.
Continue mixing until you can no longer see the butter in the dough.
Transferred to a greased bowl and cover (dough should double inside in about 1 hour, depending on temp).
Very lightly flour a flat surface punch down dough and divide into 4, 6, or 8 pieces (depends on how large you want your rolls), they will roughly double in size.
For traditional rolls (think philly cheesesteak) flatten rolls and roll into oblong logs while pinching the ends together. For hamburgers, form into balls and flatten slightly. Place on parchment paper.
Cover with a warm towel, proof in warm oven, proof in proofer, whatever. Should double in size.
Pre-heat oven to 375°F and bake for 15-17 minutes.
