Ingredients:
- 1.5 lb Salmon Filet
- 4 Tblspn Lemon Juice
- 4 Tblspn Red Wine Vinegar
- 4 Tsp Grated Lemon Peel
- 3 Tsp Basil
- 2 Tsp Garlic Powder
- 2 Tsp Soy Sauce
- Dash of Pepper
- 8 Tsp Grated Parmesan (eyeball this one, it's easy to go overboard on small/thick fish)
Directions:
- Heat grill to Medium, all burners
- Mix together all ingredients except Pepper and Parmesan Cheese
- Make a tray with tin foil for the fish (high sides so liquid doesn't spill out, spray with Pam/Oil/whatever
- Place the fish in the pan and cover with the mixture, it should be thick
- Sprinkle the Parmesan over the fish, and then top with a dash of pepper
- I like to slick up lemons VERY thin and put on the salmon before it goes on the grill, this takes the bitterness out of the parmesan
- This recipe works best on indirect heat, so if you have a center burner, turn that off and put the fish in the middle, if only two burners, turn off a side burner (or turn to its lowest setting) and keep turning the fish every 5/6 minutes
- Test at about 15 minutes. The fish should be light pink and flaky when done.
