Ingredients:
- 1 1/2-2 lbs boneless skinless chicken thighs
- 1/8 tsp salt
- 1/8 tsp pepper
- 1 tsp onion powder
- 1/2 cups reduced-sodium soy sauce
- 1/2 cup ketchup
- 2 Tbsp vegetable oil
- 2 Tbsp minced garlic
- 1/2 Tbsp red pepper flakes
- 1 cup honey
- 2 Tbsp cornstarch
- 1 Tbsp water
Directions:
- Place all ingredients except for cornstarch and water into inner IP pot. Stir.
- Lock cover into place and set to sealing.
- Set IP to "Manual" (Normal/High) for 15 minutes (add 10 minutes if frozen).
- When program ends, natural release for 5 minutes, then quick release.
- Remove chicken and dice.
- Set IP to "Saute."
- In a bowl, combine cornstarch and water. Add to sauce remaining in IP.
- Stir and cook for 2-3 minutes until thickened.
- Serve over rice.
