Ingredients:
- 1 1/2 cups sugar, plus extra for rolling
- 2 1/2 cups AP flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 14 Tbsp (1 3/4 stick) unsalted butter, softened
- 2 tsp vanilla extract
- 1 egg yolk
- 1/2 cups pumpkin puree
Directions:
- Whisk flour, baking powder, salt, and cinnamon together in a large bowl.
- Cream butter and sugar.
- Add egg yolk, vanilla, and pumpkin - mix until well combined.
- Slowly add dry ingredients and mix until just combined.
- Preheat oven to 350°F and chill dough for 20 minutes.
- Roll chilled dough into 1" balls, then roll in sugar.
- Place on silicon mat on baking sheet and press down slightly.
- Bake for about 15 minutes.
