Ingredients:
- 4 Tbps olive oil
- Salt, to taste (about 1 tsp)
- Pepper, to taste (about 1 tsp)
- Garlic powder, to taste (about 2 tsp)
- 2 pork tenderloins
- Bacon (enough to fully wrap tenderloins, about 3 lbs)
- 6 Tbsp honey
Directions:
- Preheat oven to 350 F
- Season/rub tenderloins generously with salt, pepper, and garlic powder
- Heat large oven-safe skillet (with enough room for 2 tenderloins) on medium
- Add olive oil to skillet and let heat (do not allow to burn)
- Sear all sides of pork tenderloins (do not cook through)
- Wrap tenderloins in bacon
- Placed wrapped tenderloins, seam side down, back into skillet
- Pour honey over tenderloins
- Bake in oven until pork reaches 140 F, baste every 10 minutes with sauce in skillet
- Remove sauce from pan and pour into sauce pan
- Broil tenderloins in skillet for 2-3 minutes
- Remove tenderloins from broiler, wrap in foil, and allow to rest for at least 5 minutes
- Skim fat from sauce and discard
- Heat remaining sauce on medium and stir constantly
- Sauce is finished when it is thickened and reduced, which varies greatly on amount of sauce and fat
