Ingredients:
- Mac 'n Cheese - Easy Mac 'N Cheese
- 1/4 Cup AP Flour
- 2 Large Eggs - Beaten
- 3/4 Cup plain bread crumbs
- Vegetable oil
Directions:
- Put mac and cheese in greased square baking dish (8x8), either refrigerate or freeze to completely cool.
- Once cooled divide into 16-20 equal portions and roll into balls.
- Set up three dredge stations, one with egg, one with bread crumbs, one with flour.
- Dredge in flour, then in egg, then in bread crumbs. I would also suggest flattening them a bit to about 1.5" in height, this helps them cook more evenly.
- Heat about 1/2" to 3/4" of oil (I used vegetable oil) in a pan (350°).
- Put bites into oil and cook about 2 minutes per side, and drain on a wire rack.
