Ingredients:
Pie Crust
5–6 cups Granny Smith Apples, peeled and sliced into 1/4– inch pieces
1 tablespoon lemon juice
1/3 cup light brown sugar
1/3 cup granulated sugar
1/4 cup flour
1 teaspoon ground cinnamon
Streusel Topping:
1/2 cup brown sugar (packed), light or dark
1/2 cup old-fashioned rolled oats or quick oats (not instant)
1/4 teaspoon salt
1/2 cup butter, at firm room temperature (1 stick)
Directions:
Preheat oven to 375 F and place rack on bottom of oven
Prepare pie crust and place in refrigerator
Combine pie filling ingredients and set aside
Combine streusel topping ingredients using pastry blender, set aside
Spoon pie filling into crust, discard extra liquid
Bake for 10-15 minutes
Top pie with streusel topping, bake an additional 40-50 minutes - cover crust with foil if it begins to burn before filling bubbles or bottom crust bakes
