Ingredients
300g AP Flour
400ml warm water (hot faucet is fine)
1 tsp salt
1 tsp sugar
2 tsp baking powder
2 tsp yeast dissolved in 2 tbsp warm water
butter to cook in
Directions
Dissolve yeast in 2 tbsp warm water and set aside to proof
Whisk Flour, Water, and salt in a bowl (electric beater on medium for 1 minute)
Add Sugar, Baking Powder, and yeast mixture and whisk for another 30 seconds
Cover and allow to rise in a warm place for 15 to 30 minutes (or use a proofer)
Cooking
A griddle, cast iron, or large pan work best for this at medium high heat (~400
Butter cooking rings (3.5" Rings) and place on heating surface to warm
Drop a little dab of butter at the bottom of each ring and allow to melt
Pour 1/4 cup of batter into each ring and allow to cook for 1 1/2 minutes or until bubbles first start to form
Turn down the heat about half way and allow to cook for another 3-4 minutes
At this point the batter should no longer be runny and you can remove the rings
If desired you can flip the crumpets to give the tops a little color
Eat with traditional toppings (Butter and Honey) or go nuts and slather them up with the sweets
