Ingredients:
Filling:
- 4 oz. cream cheese, softened
- 4 Tbsp confectioners' sugar
- 2/3 cup pumpkin puree
- 3 1/2 cups graham cracker crumbs (about 24 graham cracker sheets)
- 1 tsp pumpkin pie spice
- 1 tsp cinnamon
Coating:
- White chocolate candy melt
- Extra graham cracker crumbs for garnish
Directions:
- Beat all filling ingredients together in a stand mixer fitted with paddle attachment. Beat on slow speed until well combined.
- Cover and chill at least an hour, up to 24 hours.
- Roll into balls and place on parchment paper. Chill at least 30 minutes.
- Melt white chocolate candy melt according to package directions.
- Dip filling balls into melted white chocolate and place on parchment paper. Before chocolate hardens, sprinkle with graham cracker crumbs.
- Chill until set.
