Ingredients:
- 1 lb. boneless skinless chicken breast
- 1 medium onion
- 2 Tbsp olive oil
- 2 garlic cloves, minced
- 14 oz. chicken broth
- 1 can (4oz) green chilis
- 2 tsp cumin
- 2 tsp oregano
- 1 tsp cayenne
- 1 tsp salt
- 2 big jars great northern beans, drained
- 1 cup corn
- 1 block Monterrey Jack Cheese
Directions:
- Cut up chicken into small cubes
- Process onion and chilis separately
- Grease dutch oven with 2 Tbsp olive oil
- Saute onion and chicken until chicken is browned
- Add garlic and saute 1 more minute
- Stir in broth, chilis, cumin, salt, oregano, and cayenne pepper, bring to boil
- Reduce to low
- Mash 1/3 beans
- Add all beans and corn to dutch oven
- Simmer 20-30 minutes
- Shred cheese and garnish soup, if desired
