Ingredients:
- 1 3/4 sticks butter, softened
- 1 1/2 cups flour
- 1 1/2 cups quick oats
- 1 cup packed brown sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 10-12 oz strawberry jam or preserves (can substitute other flavors)*
Directions:
- Preheat oven to 350 F. Spray 9x13 pan with cooking spray.
- Mix together butter, flour, oats, brown sugar, baking powder, and salt with pastry blender.
- Press half of mixture into 9x13 pan.
- Spread strawberry jam over top.
- Sprinkle remaining oat mixture over jam - pat down lightly.
- Bake until light brown, 30-40 minutes.
- Cut into squares when cooled.
*I usually use the "natural" squeezable strawberry jelly - it's not too sweet and easy to spread on the pressed oat mixture.
