Cake Ingredients
4 Tbsp butter
1/2 cup sugar
1 large egg
1 tsp vanilla
1/2 cup sour cream
1 cup flour
1/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
Crumb Topping
1 1/2 cups flour
1/2 cup brown sugar
1/4 cup sugar
1/2 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
1/2 cup butter - melted
1/2 tsp vanilla
1 large tart apple, peeled and chopped
Glaze
1/2 cup powdered sugar
1 1/2 - 2 Tbsp apple cider
Instructions
Preheat oven to 350°F. Grease 8" springform pan and line bottom with parchment paper.
Topping
In a bowl whisk together dry ingredients from Crumb Topping.
Add melted butter and vanilla and stir until mixture is evenly moist.
Cake
In a separate bowl, cream butter and sugar
Add egg and beat well
Add vanilla and sour cream and beat again
In a separate bowl, stir together remaining ingredients and add to butter mixture
Stir until just combined.
Assembly
Spread half the batter at the bottom of the pan (it will be thin)
Spread apple chunks evenly over the batter
Sprinkle with roughly 1 cup of topping
Spread remaining batter over the crumbs
Top with the remainder of crumbs

Bake for 35-40 minutes or until tester comes out clean
Glaze (opt)
Combine powdered sugar and apple cider and whisk (add apple cider slowly). Drip to coat.
