Ingredients:
Filling:
- ~3lbs of Red meat
- 1/2 cup of olive oil
- 1/2 cup of lime juice
- 1/4 cup of orange juice
- 2 tbsp soy sauce
- 1 tbsp of apple cider vinegar
- 1 tbsp of Fresh minced garlic
- 1 tbsp of fresh cilantro (dried works, but fresh tastes SOOO much better)
- 1 tbsp of onion powder
- 1 tbsp of chili powder
- 1 tbsp of paprika
- 1 tbsp of white sugar
- 3/4 tbsp of ground cumin
- 1 tsp of dried oregano
Directions:
- If you have time to let the marinade soak for 24 hours, do so...if not, a shortcut is forking the meat a lot to let the marinade permeat it...it will lead to a drier piece of meat though. Put your meat in a 1 gallon bag.
- Combine all the ingredients. I like to but them all in the food processor to make sure everything is well mixed.
- Pour into bag.
- Regularly move, flip, jostle the bag in the fridge to make sure the marinade has had time to soak on all sides.
- Cook as you would normally cook a steak. I recommend a hot sear and low cook up to Medium Rare.
- Let set for 5 minutes, then slice thinly.
