1 lb Ground Venison
1/4 lb Ground Pork Sausage (Johnsonville Regular)
3/4 cup Panko
2 Eggs
1 Tsp Salt
1 Tsp Italian Seasoning
1 Tsp Crushed Red Pepper
1/2 Tsp Garlic
Directions
Preheat oven to 400° F
Line cookie sheet with foil and put a wire rack on top (wire rack should clear sheet by 1/2")
Combine ingredients (by hand is easiest) in a large mixing bowl
Shape into roughly 1.5" balls and place on wire rack (try to evenly space), made 16 balls for me
Cook until internal temp is around 160° F (don't let them get over 160° F or they will be dry)
Serve in whatever, goes well with this Cheese Sauce Cheese Sauce
