Venison Meatballs

• 1 lb Ground Venison

• 1/4 lb Ground Pork Sausage (Johnsonville Regular)

• 3/4 cup Panko

• 2 Eggs

• 1 Tsp Salt

• 1 Tsp Italian Seasoning

• 1 Tsp Crushed Red Pepper

• 1/2 Tsp Garlic

Directions

1. Preheat oven to 400° F

2. Line cookie sheet with foil and put a wire rack on top (wire rack should clear sheet by 1/2")

3. Combine ingredients (by hand is easiest) in a large mixing bowl

4. Shape into roughly 1.5" balls and place on wire rack (try to evenly space), made 16 balls for me

5. Cook until internal temp is around 160° F (don't let them get over 160° F or they will be dry)

Serve in whatever, goes well with this Cheese Sauce Cheese Sauce
