Ingredients (CC):
1 can (15oz) Pumpkin
2 cups Sugar
1 cup Canola Oil
4 eggs
2 cups AP Flour (sifted)
2 tsp Cinnamon
2 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Salt
Ingredients (Filling):
1 package (8oz) Cream Cheese (room temp)
1/3 cup Sugar
1 egg
Directions:
Preheat oven to 350 F
Beat Pumpkin, Sugar, Oil, and Eggs (CC)
Combine Dry Ingredients (CC)
Beat dry ingredients into wet until just combined
Cream Sugar and Cream Cheese
Beat Egg into Sugar/Cream Cheese until just combined
Fill cupcake liners 1/3 full with CC mixture
Drop 1tbsp of Filling into the center of each cupcake
Top with remainder of CC mixture
Bake for 20-25 minutes (until toothpick comes out clean)
Top with powdered sugar if desired
