Ingredients:
- 1.5lbs of salmon cut into 4/5 1.5" Sections
- 2 Tblspn dijon mustard
- 2 Tblspn Honey
- 2 cloves garlic, minced
- 3/4 cup Panko bread crumbs
- 2 Tblspn Parsley
- 1 tsp Lemon Zest
- 2 Tblspn Olive Oil
- Dash of Salt & Pepper
Directions:
- Preheat oven to 400° F. Line a baking sheet with tin foil, and spray with Pam/Olive Oil/whatever.
- Whisk Mustard, Honey and Garlic together (whisk well)
- In a large bowl whisk Panko, Parsley, Lemon Zest, and Olive Oil together (it will be kind of clumpy)
- If you haven't, cut salmon into roughly 1.5" Strips
- Lightly salt & pepper the salmon (don't overdue it or it will overpower the honey/garlic)
- Dredge the salmon on the 3 non-skin sides in the Honey Mustard, then dip in the bread crumb mixture (think dipping chicken in batter). It should stick easily, but you may have to press the panko mixture into it
- Place the pieces of salmon on your pan with at least an inch between each piece
- Cook for ~15 minutes or until Salmon is cooked through
