INGREDIENTS:
1 1/2 Cup All Purpose Flour
1 Cup Old Fashioned Oats
1/4 Teaspoon Salt
1/2 Teaspoon Baking Soda
10 Tablespoons Unsalted Butter, melted
1/2 Cup Light Brown Sugar, packed
1 Teaspoon Pure Vanilla Extract
3/4 Cup Jam or Preserves
DIRECTIONS:
Preheat oven to 350 degrees Fahrenheit
Line an 8 inch by 8 pan with aluminum foil
Spray the pan with a non stick spray
Ín a medium bowl combine flour, oats, salt and baking soda
In a large bowl whisk butter brown sugar and vanilla until well combined (at least 1 full minute)
Add dry ingredients and stir with a wooden spoon until well combined
Take out 3/4 cup of dough and place in the refrigerator (It will be the topping)

Bake for ten minutes
Remove from the oven and carefully spread the jam onto the base
Take the remaining dough from the refrigerator and crumble the cookie dough over the top of jam layer
Return to the oven and bake 15 to 18 more minutes until the topping is light golden brown
Place pan on wire rack to cool completely
